Gluten-free & dairy-free pumpkin bread! Love fall recipes!🎃🍞💛🍁 🍁 3/4 cup pumpkin purée 🍁 2 eggs 🍁 1 1/2 cups brown rice flour 🍁 1/2 cup almond flour 🍁 1/2 cup coconut oil 🍁 1/3 water 🍁 1/4 cup powder stevia 🍁 1 1/2 tsp baking powder 🍁 1/2 tsp baking soda 🍁 1/2 tsp salt 🍁 1 tsp cinnamon 🍁 1 tsp nutmeg 🍁 2 tsp pumpkin spice 🍁 splash vanilla 🍁 Mix wet ingredients together in a bowl and all dry ingredients in a separate bowl. 🍁 Fold dry mixture into dry mixture. Pour into greased bread pan. 🍁 Bake at 350 F for 55 minutes. If you want to add pumpkin seeds to the top take out the bread half way and sprinkle them to the top. Roasted Pumpkin Soup! So yummy!🎃💛 Recipe: 🎃 1 small to medium pumpkin 🎃 2 boxes of vegetable broth 🎃 4 carrots 🎃 2 celery stalks 🎃 6 green onions 🎃 5 garlic cloves 🎃 1 Tbs fresh sage 🎃 1/2 Tbs oregano 🎃 A pinch of cayenne pepper (be very careful with this) 🎃 1 tsp cumin 🎃 1 tsp nutmeg 🎃 salt & pepper to taste 🎃 2 cups almond milk 🎃 Preheat oven at 425 degrees F. Cut the top of the pumpkin off and gut all the seeds out. Rub some olive oil, salt & pepper & a little bit of garlic powder. Place pumpkin top down in the oven for 20 minutes 🎃 In a large stockpot sauté the garlic and green onion with some olive oil. Add carrots and celery and cook for about 4 minutes. Add sage and spices. Add broth and let it start simmering. Once the pumpkin comes out and cools off for a minute, scrape insides out and add to the soup. Cover the soup and let it simmer some more. 🎃 Once the soup had simmered let it cool off. Mix in a blender with the almonds milk ( you will probably have to do this in parts because the liquid will probably be too much for the blender.) 🎃 Return back to pot and heat up done more. Homemade gluten-free apple pie! Yum yum!🍎🍎🍎 Crust 🍎 2 cups raw cashews 🍎 1 cup brown rice flour 🍎 1 cup oats 🍎 2 cups pitted dates 🍎 2/3 cups water 🍎 Pinch of salt 🍎 1 tsp vanilla Filling 🍎 4 apples (peeled & thinly cut) 🍎 2 cups pitted dates 🍎 Juice from half a lemon 🍎 1 tsp vanilla 🍎 2 tsp cinnamon 🍎 1 tsp nutmeg 🍎 2/3 cups water 🍎 For the crust preheat oven at 400 degrees. Process dry ingredients in a food processor until pulverized into a flour and set aside. Add dates and wet ingredients through food processor until a creamy consistency. 🍎 Add the creamy mixture to the dry ingredients and mix well with your hands. Roll into a ball and leave in the fridge for about 10 minutes. 🍎 Take the dough and split in half. Take one half and roll it out in a pie pan. Put in the oven for 15 minutes. 🍎 While the crust is baking, start making the filling. Blend all the ingredients for the filling expect the apples in a food processor. Add more water of it seems too dry. 🍎 Mix the blended ingredients with the apple slices. When the crust comes out add the filling. Roll the rest of the dough and top your pie. 🍎 Turn temperature down in the oven to 359 degrees. Bake pie for 45 minutes. Made a few changes to it to make it more to my liking! 🍫 1 3/4 cups oats 🍫 3/4 cup cacao powder 🍫 3 egg whites 🍫 1/2 cup stevia 🍫 1/2 unsweetened applesauce 🍫 1 cup almond milk 🍫 1 tsp vanilla 🍫 1/2 cup Greek yogurt 🍫 2 tsp apple cider vinegar 🍫 1 1/2 tsp baking powder 🍫 1 1/2 tsp baking soda 🍫 pinch of salt 🍫 1/2 cup enjoy life chocolate chips 🍫 Blend all ingredients together except for the chocolate chips. Place cupcake liners into 12 muffin pan. Scoop batter into muffin pan and add half of the chocolate chips. Bake at 350 degrees for 10 minutes. Remove pan and add remaining chips to muffins and bring back into the oven for another 5 minutes. Some Sunday baking! Love making delicious homemade treats! Nice and healthy homemade vegan granola: 🌻 3 cups oats 🌻 1 1/2 cups mixed nuts and seed of your choice 🌻 Juice from 1 apple (or 1/2 cup unsweetened apple juice) 🌻 1/2 cup pure maple syrup 🌻 1/4 cup coconut oil 🌻 1 Tbsp vanilla extract 🌻 1 tsp ground cinnamon 🌻 1/2 tsp nutmeg 🌻 1 tsp salt 🌻 In a large bowl mix oats with nuts and seeds. In a small sauce pan mix coconut oil, apple juice, maple syrup, vanilla, and spices on low heat until well mixed. Combine the mixture with the oats and nuts well. Place parchment paper on a baking tin and spread granola well over the tin. Bake for 40 minutes at 325 degrees. Homemade almond milk! I've posted this process before but it's been a while so I figure I would post it again😊 ▫️Soak 1 cup of raw almonds over night. ▫️Blend soaked almonds with 4 cups of water. ▫️Add sweetener of choice (stevia, agave, dates, vanilla, etc.) ▫️Use cheese cloth to drain milk. ▫️Keep refrigerated. My dessert tonight was my first #cakeinasquash!!! I've see several posts of mug cakes made in squashes so I decided to try it out! So yummy!! I used an acorn squash. I sprinkled some coconut oil and cinnamon and baked it in the oven for 20 minutes at 425 degrees. I used the same mug cake recipe I did for my chocolate pumpkin mug cake but omitted the pumpkin purée an pumpkin spice. So it's just a chocolate mug cake and cooked it in the microwave for 2 minutes inside the squash. I topped it with some Greek yogurt mixed with stevia and vanilla and chocolate sauce made with cacao powder, stevia, almond milk melted in the microwave for 30 seconds.
