Our Christmas Day Tortilla Soup
For as long as I can remember, this soup has been our Christmas day brunch. Everyone loves adding their own toppings. You can make the soup the day before, and reheat it on low on Christmas morning.
Chicken broth cooked with lime, chilies, carrots, onion, squash, hominy and chicken.
Toppings include: organic cheddar, avocado, baked corn tortilla strips, cilantro, onion, lime wedges and a plethora of salsas and hot sauces.

Lunch of Baked Eggs and Microgreen Salad
Sauteed shiitake mushrooms, parmesan and a free range egg plunked into an oven-hot ramekin sizzling with a teaspoon of olive oil. Bake in a very hot oven until the white is done and the yolk is still runny (about 5-8 minutes).
Microgreens tossed with olive oil, apple slices, parmesan and toasted pecans finished with a drizzle of balsamic reduction.
