Ingredients: 4 cups waffle fries. 1 cup cooked chicken, shredded. 1 cup shredded cheddar cheese. 1/2 cup diced tomatoes. 1/4 cup sliced green onions. 1/4 cup sour cream. 1/4 cup maple syrup. 1/4 cup barbecue sauce. 1/4 cup pickled jalapeos optional. Salt and pepper to taste.
Instructions: Preheat your oven to 425F 220C. Spread the waffle fries in a single layer on a baking sheet and bake for about 20-25 minutes or until they are golden and crispy. While the fries are baking, in a small saucepan, combine the maple syrup and barbecue sauce over low heat. Stir until well combined, and let it simmer for a few minutes until it thickens slightly. Remove from heat. Once the waffle fries are done, remove them from the oven and sprinkle the shredded cheddar cheese evenly over them. Return the baking sheet to the oven and bake for an additional 2-3 minutes, or until the cheese is melted. Remove the waffle fries from the oven and top them with the cooked shredded chicken, diced tomatoes, sliced green onions, and pickled jalapeos if using.
