The #aussie Summer is around the corner. This means #whisky #OnTheRocks and cocktails. I have been trying to make clear Ice at home and finally found the right formula! Its such a easy thing to do. I placed a silicon mold into a small esky/chiller. Filled it water until the mold was full of water. Placed it into the freezer with the esky/chiller lid open for 24 hours. This allows the water to chill and freeze from all sides, top and down at a consistent rate - without getting complicated, this process makes the middle of the ice completely clear. No need for expensive gadgets that make one cube or ball at a time. Finally got to try the #Glenlivet Illicit Still. Aged for 12 years and bottled at a higher abv, it delivers an exceptional #whisky at a great price. Plenty of fruity notes on the nose, pineapple profile is unmistakable. The palate again leads with a fruity profile and honey notes thrown in for good measure. The surprise for me was the amount of maltiness, it adds further value to a very well priced drop. Have you tried it? #macallanmonday with two excellent Macallan's. The #macallan12 aged in sherry cask is a particular favourite. Though this expression is a US import, it is bottled at 43% abv, while the Australian bottles are 40% abv. That 3% makes a significant difference. #WhiskyWednesday doesn't get any better when celebrated with #macallan #oscuro. A high quality #whisky with a price tag to match. Straight away the nosing is full of fruity notes, raisins, citrusy mixed with vanilla nd chocolate notes. Palate is again full of sweetness, from sugary sweetness, think choocolate and vanilla, to fruity sweetness the form of raisins and berries. There is no doubt a sprinkling of cinnamon spice to keep this whisky honest. Just when you think it can't get any better you get gliding notes of smoke on the finish. Its delicate enough to not overwhelm the senses, it rather adds to it. Sunday afternoon, final afternoon before lockdown ends. Its been 105 days ans this a great way to bring it to an end. #Kavalan solist port cask paired with cheddar cheese infused with cracked pepper. The nosing is fruity with zest and an excellent oak you associate with premium bourbon. The fruitiness continues to the palate in the form of plum, citrus which is balanced nicely with toffee notes along with hints of dark chocolate. On the palate there are citrusy fruit notes with a fair bit of oak coming on mid palate along with sherry notes. Throughout the experience there are smoky hints.
