Last night my son and I set out to make yet another meal of deliciousness; this time with scallops. We cut up sweet potatoes and baked them, caramelized onions and garlic in bacon grease to drizzle over the fries, wrapped scallops in bacon, sprinkled ground vanilla beans on each side and seared them, rolled the rest of the scallops in whole wheat flour then egg, then rolled them in unsweetened shredded coconut and baked them. For the salsa we used habanero peppers, persimmons, mango, tomato, cilantro and lime.
Prep time: almost 2 hours, (most of it waiting for the fries to bake)
Eat time: 15 minutes
Clean up time: 20 minutes
Time: well spent
Just add beer. Those are Drake’s 1500s.
