Corn and Black Bean Salad Ingredients: 1 3/4 cup fresh corn, cut off the cob or frozen sweet corn 2, 14.5 oz cans no-salt-added canned tomatoes 1/2 cup black beans, drained and rinsed 1/4 cup chopped red onion 3 tablespoons fresh cilantro 2 tablespoons lime juice 1 tablespoons canola oil 1/2 teaspoon course salt (Kosher or sea salt) 1/2 teaspoon ground cumin 1 dash black pepper to taste 1 clove garlic, finely chopped 1 fruit without skin and seeds avocado, pitted, peeled and chopped Preparation: 1. Steam fresh corn for a minute or two (or, if tender and sweet enough to eat raw, skip the steaming). If using frozen, cook corn as directed on bag. Rinse with cold water; drain. 2. Stir together corn and remaining ingredients except avocado. Refrigerate at least 1 hour.
