France is running out of butter. Several reason are believed to be behind this issue, such as the ending of milk quotas, French inflexible pricing system and changes in the world milk supply.
Moreover, the effect food fads have on food commodities consumption worldwide is also an interesting factor to reflect on. The narrative coming from the food industry has - without a doubt - something to do with this phenomenon: while sugar and vegetable oils are now the new evils - butter is improving its reputation. Hence, consumers started re-considering it as a healthy and quality ingredient; including new consumers in Assia and the Middle East, as they are already capturing part of the world butter supply.
