Ingredients: 1 cup lentil pasta. 2 cups mixed vegetables bell peppers, zucchini, mushrooms, onions. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. 1 clove garlic, minced. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Cook lentil pasta according to package instructions. Drain and set aside. Preheat grill to medium-high heat. In a bowl, toss mixed vegetables with olive oil, balsamic vinegar, minced garlic, salt, and pepper.
