Freestyle Curry + Rice Noodle 🍜 Making a simple curry paste is super easy and much cleaner than the jar stuff. Pick your curry style (Indian, Thai, Indonesian, Malaysian, Caribbean etc), have a Google and look at the flavour palette of that country... What are the common ingredients? Experiment by making up dry spice mixes or wet pastes by whizzing a few bits up in a food processor. Don't be scared! Get creative! Below is a quick Indinessian inspired curry that went down a treat! --------------------------------------------- In a food processor whiz 1 red Birdseye chilli, 1 lemongrass stalk (white bit only), 4 garlic cloves, 1cm chunk fresh ginger, 1 tsp ground turmeric, 1 tbs coriander seeds, 1 onion, 1 tsp coconut sugar, 2 Tbs soy sauce. Chuck this paste in a hot pan with a little sesame oil. Cook for 1 min. Add 1 can coconut milk, one can water and bring to boil. Add cubed potato + carrot.
