Dinner tonight is a Pho/Ramen in-betweenish tofu soup. Broth: 2 liters of water, 3 blocks of beef broth with a thumb sized piece of ginger (sliced), 2 star anise, splash of soysauce, rice vinegar and fish sauce. I let it simmer for about an hour when I added the tofu in and let it simmer for another hour. Fished out the other ingredients (ginger and anise). Served on Ramen noodles and topped with cilantro, mint, red chili, spring onions and soybean sprouts. Spicy Pumpkin-Mango Soup - 1 Tbs Coconut oil - 1.5 cm ginger finely chopped - 1 Hokkaido pumpkin --> Heat up oil. Add ginger and pumpkin. Add - 300 ml Veggie stock - 1 can coconut milk - 1 Mango diced - 1 Tbs peanut butter Let simmer for about 15 mins. Then puree everything. Season with - 1 Tsp Sambal Olek - 1 Tsp Vanilla - Salt & Pepper. HOLIDAYS!!!! 😍😍😍😍 My mum and I spend a week at the sea side. Feels so good to just relax and not having to think about something important 😁😁 Today's breakfast - porridge with an apple-plum-compote. It's pretty cold here but the sun is shining! ☀☀ Now heading to the beach. Have a great day everyone 😘 --> For the compote: 2 small apples (peeled and cut into small dice) and 7 plums (also cut into small cubes) Add a little water at the bottom so it doesn't burn when you cook it. Add a looot of cinnamon and if needed sweeten it. We didn't because the fruits were sweet enough.
