It's January 4th, World Braille Day. On this auspicious day in 1809, a child named Louis Braille was born in 🇫🇷 Coupvray, France. Young Louis was 👨🏼🦯 blinded at the age of three by an accident in his father's harness-making shop. Despite his disability, Braille excelled in his education.
While he was a student at the Royal Institute for Blind Youth in Paris, he began developing the 📚 reading system for the blind that he'd eventually become world-famous for. Braille's creation involved a code he invented himself and used cells that contained up to six dots, making it possible for a 👆🏽 fingertip to feel an entire cell with just one touch and move quickly to the next cell.
Braille spent the rest of his life teaching at the institute and perfecting his system, but unfortunately didn't live long enough to see it put into use. Braille suffered from a respiratory illness (probably tuberculosis) most of his adult life and finally succumbed to the disease in 1852 at the age of 43.
Two years later, thanks to the unrelenting insistence of his students, the Royal Institute for Blind Youth finally officially adopted Braille's system. Its use quickly spread throughout the French-speaking world, but was slow to catch on elsewhere. After his introduction to the system at the first European Conference of Teachers of the Blind in 1873, 🇬🇧 Britain's Dr. Thomas Rhodes Armitage championed Braille's invention, and its use quickly spread over most of the rest of the planet. The 🇺🇸 US was slowest to see the light. It didn't adopt the system until 1916.
In November 2018, the 🇺🇳 United Nations proclaimed that from now on, World Braille Day would be celebrated as an international day every January 4th to show appreciation for Louis Braille and to promote "awareness of the importance of his creation as a means of communication in the full realization of the human rights for blind and visually impaired people." La mayoría de las recetas que vemos en línea, que pasan de generación en generación en las familias o que leemos en los libros y revistas de cocina, son para grupos grandes de comensales, de grandes porciones que eventualmente tendrán que almacenarse en la refrigeradora, consumirse casi que a la fuerza (cuando pasa la novedad del platillo) o simplemente quedarán olvidadas en la refri y eventualmente su destino final será el basurero.
Esto es, sin duda alguna, una limitante para querer aventurarse a preparar algo; también podemos agregar que nuestras casas son pequeñas, nuestros electrodomésticos, nuestras alacenas, nuestras familias y nuestros espacios de habitación se han ido reduciendo con los años, por lo que el espacio que tenemos, tanto para cocinar, para almacenarlo y los implementos u accesorios para prepararlos son diferentes con los que crecimos.
Algo que nos ha enseñado este 2020 es que nuestra casa es nuestro mundo y en nuestro mundo no debemos desaprovechar ni desperdiciar ningún recurso, tampoco debemos privarnos de comer delicioso, saludable y apenas con los recursos e implementos necesarios.
Un día me antojé de pizza, pero él no es tan fan de la pizza. El simple hecho de hacer o pedir una pizza solo para mi y tener que guardar el resto para seguir comiéndola el resto de la semana, no me hacía mucha gracia. Todas las recetas para la masa de la pizza pedían más de 4 tazas de harina, pero yo solo quería una pizza, pequeña, personal, para mi. Decidí investigar más sobre cómo hacer la masa de pizza perfecta para una porción y así fue como nació la idea #Para1ParaDos
Desde ese momento he ido escalando y probando muchas recetas en porciones perfectas #Para1ParaDos personas, con el fin de evitar el desperdicio de alimentos, reducir el consumo de alimentos procesados y ultraprocesados, también, que se puedan preparar en un hornito, horno pequeño, sartén o en una freidora de aire.

So, I'm reading the newspaper (yes, I actually read newspapers) and so my town is having mobility days, where young kids and other people are encouraged to walk to school on foot, riding bikes or riding the bus. The mayor said that he wants to decrease traffic in our small town and also decrease the number of exhaust fumes that come from cars and destroy our Mother Earth. He also said that he is encouraging the young 16-year old Swede Greta Thunberg, who is the voice for young generations, and he is doing everything in his power to go after her ideal to raise awerness for the global coinsciousness.
So I can finally say my town has a good leader. Not a perfect one, but a good one. Baby steps.
