i've seen a few posts on how the Van Speech is less about joe being an incurable romantic (which he very much is!!) and more about offering what scant comfort to nicky he can. i totally agree with that interpretation, and i think the "i like watching you sleep" is nicky's version of that.

i'm on the "joe was dead" team, but even if he was only asleep--he had to have been utterly exhausted and in pain to drop off in that environment, with the bright lights and the noise and the restraints digging in and nicky being tortured next to him. when he wakes up/revives, he's visibly terrified. and nicky can't do anything about, he's pinned down out of reach and shit is FUBAR.

so he says a sweet little nothing to let joe know he's there, that he loves joe. and it works; we see joe shift a little more into his natural personality. and then nicky laughs uproariously, which we haven't seen him do even with joe. and you can tell it cheers joe up. and then the little smirk and the "oh, that time in malta"--he gives joe a minute of happiness before reality slams back down.
