Hello. It's been awhile. I've been busy but I have kept trying to new things and started feeling I should share these opinions again. So here we go!
I tried this vegan mac and cheese yesterday after several weeks of cravings for mac and cheese and being too busy/lazy to make it from scratch. I'll be honest, my hopes for vegan mac and cheese are low. I've been disappointed far too many times. And then this one? Made from chickpeas? What was I expecting? Definitely not what I got. I thought this would be really bad but to my surprise it was palatable. Actually, it was better than palatable. I slapped some hot sauce on it and it was pretty good! I followed the directions and the directions of many tiktokers: add in some vegan butter and vegan milk for consistency.
Is it the best mac and cheese (vegan) that I've ever had? No. I need a creamier consistency. I need more flavor. More salt. Honestly, I need them to add more powder to the dang packet. But for a pre-packaged easy meal this is pretty great! If you've got some time, maybe take some silken or firm tofu and blend it up with some garlic, nutritional yeast, onion, and whatever other flavors you like and add it to this to get that creamier consistency. If I had time I would add some extra flare to it but overall I'm very pleased. 7/10 from me!

Vegan Shells and Cheese
Iāve searched high and low for a good vegan macaroni and cheese recipe.Ā Iāve tried all the recipes out there and a few boxed varieties and nothing gave me the satisfaction of eating a good old bowl of dairy macaroni and cheese.
I won't lie and say giving up mac and cheese was easy.Ā While it wasnāt the most difficult thing to do, it still wasnāt easy.Ā It isnāt something Iād eat on a daily basis but I still loved those days my mom prepared a box of Annieās or Kraft macaroni and cheese.Ā Sprinkled with some black pepper and red chili flakes was how Iād always eat it.
After becoming vegan I knew replicating a completely cheesy meal wasnāt going to be easy.Ā After trying some vegan recipes I gave up all hope.Ā Thatās until my family decided to make macaroni and cheese and I was stuck eating pesto pasta.Ā Donāt get me wrong, pesto is amazing but itās not a substitute for macaroni and cheese.
I decided Iād wing it and make my own vegan macaroni and cheese recipe.Ā Honestly, it couldnāt be any worse than the ones Iād tried before.Ā So I got to work with a potato, carrot, cashews, and various spices.Ā I figured going simple first and adding flavors was the best way to go and I was not disappointed.Ā The best part about this is that I donāt have to feel guilty about the unhealthiness of the dish when I eat it.
Potatoes get a bad rap but theyāre a good source of potassium.Ā Potassium (K+) is very important to the heart.Ā Any changes (too low or too high levels) can impact the heart and cause EKG changes leading to arrhythmias.
Carrots are a good source of vitamin A.Ā Vitamin A is important for the differentiation of epithelial cells to form specialized tissue, making it important for mucus secreting glands, skin, and vision.Ā Fun fact, vitamin A is one of the treatments for measles and APL (acute promyelocytic leukemia).
Nutritional yeast, as many of you know, is a source of vitamin B12.Ā B12 is very important for DNA synthesis which is why deficiency of B12 can lead to megaloblastic anemia.Ā B12 is stored in the liver and the reserves last awhile which is why deficiency isnāt seen immediately.Ā The stores would need to deplete, which could take several years.Ā Vegans, beware.Ā Though nutritional yeast is the vegan source of vitamin B12, only a very large amount per day would meet the daily requirement for it.Ā Supplement your diet with B12 tablets.
I highly recommend everyone try this.Ā Change up the ratios to fit your taste buds but I truly believe this is the best vegan macaroni and cheese out there.Ā Hey, if it could satisfy my picky taste buds I think itāll be fine for everyone else.Ā Donāt knock it before you try it.

Letās call if for what it is: A BOMB ASS MAC & CASHEWS! 100% plant based, gluten free, oil free, super creamy and delicious enough to fill your mac & cheese void. Not to mention, I have the recipe just for you! š ā¢ā¢ā¢ Mac & Cashew Recipe ā Boil a heaping 1/2 cup of raw cashews until soft (about 30 mins) ā Once soft, drain. ā In a blender, blend cashews + 1/3 cup veggie stock until smooth. ā Add in 1/4 tsp garlic powder, 1/8 tsp coriander, 1/2 tsp coarse sea salt, 2 tbsp nutritional yeast, 3/4 tsp apple cider vinegar, 1/4 cup unsweetened almond milk, 8 steamed baby carrots (for color), 1/2 tsp white miso, 1 sm pinch nutmeg. ā BLEND + add more seasoning according to taste buds! ā (OPTIONAL)(ADDS CHEESY MOUTH FEEL) In a bowl, mix 1/3 cup unsweetened almond milk + 2 tsp tapioca starch. ā On medium heat, add tapioca mixture to a small sauce pan and cook until āglueā forms. (about 30 seconds) ā Add cashew mixture and cook until desired consistency! ā Pour over your favorite gluten free pasta + call it a day! ā¢ā¢ā¢ You did it!
