LET’S TALK ABOUT THIS ENCHILADA BAKE THAT I JUST MADE! Fan👏🏼frikin👏🏼tastic👏🏼

It turned into a “bake” because, as always, I made too much filling/didn’t have enough tortillas, so I spooned the extra filling around the whole thing. I didn’t really follow a recipe, just kind of went with whatever I had in the kitchen.

▪️Filling was leftover rotisserie chicken, black beans, corn, taco seasoning, and a little bit of cheese

▪️Topped with red enchilada sauce and more cheese

▪️Baked covered for 20 minutes at 375, then uncovered and broiled on high for ~5 minutes

▪️Topped with plain non fat Greek yogurt
