Hummus is one of my food staples, so easy to make and high in protein! I tend to shake it up and change the flavours so I don’t get bored of it. The hummus I made today is spicy chipotle to warm me up a bit on this rainy day.
Best served with Mary’s organic crackers, veggies, or mixed in a salad!

Winter running essentials - First time running 16 miles! Piling on the miles in anticipation of the Toronto marathon.
These snacks are deceiving... What appear to be chocolate chip cookies are actually high protein (vegan) chickpea peanut butter cookies with cacao nibs.
One is missing because I just couldn't contain myself
Simple ingredients: chickpeas, peanut butter, baking soda, vanilla extract, maple syrup, and cacao nibs
Quinoa & marinated adzuki beans on shredded raw kale with goji berries, heirloom grape tomatoes, cucumber, toasted mixed nuts, parsley, cilantro, sunflower sprouts, grilled sweet potato & tofu steaks with peanut lime dressing!
Prepping my meals for the next couple days... so important to fuel myself during my 12 hours shifts! Keeping it simple with salads with added tofu and quinoa and my favourite lemon tahini dressing.
Maybe I’m crazy, maybe I love running. Never thought that day would come when I would be running in snow, wind, and -15 Celsius.

Contrary to popular belief it IS possible to eat a healthy lunch out. Try to incorporate as many veggies into each meal as possible. Hydrate and keep lunch light to keep you energized for the entire day!
Lunch: Fully loaded avocado (brown rice, peanut sauce, and sprouts), superfood salad, leek and potato soup.
